Spaghetti squash

Winter squash like spaghetti squash is simple to prepare and a wonderful addition to salads, a pice of meat or fish and whole grain dishes, as well as soups and stews! And they say it has natural anti-depressants to get us through the dark months of the year.

Storage

Store winter squash on your counter or table, at room temperature. It lasts for a long time.

Cooking inspiration

We love ours oven baked with olive oil, salt and peppar and some graded parmiggiano. Serve that with some cold creme fraiche and black peppar.
 
Make sure you oven baked it long enough for the meat to get really soft, preferably at least 45 min - 1 hour on 200-225 degrees. The meat should turn in to noodle like texture when you poke it with a fork. You can experiment as much as you want, perhaps make it with garlic and melted cheese and herbs.

You can also scoop out the meat after it being cooked and make a soup out of it.
